Day 1 of my Gluten-Free Journey

Hello, internet world! I am making this blog to keep track of the foods I intake throughout the day. I have been having troubles with gluten for quite awhile (almost 10 years!) and today I have finally decided that I don't want to live in pain anymore. There were certain food dishes where I could just look at it or just have it in my mouth and my stomach was already upset. Without ado, here are pictures of my day 1 foods...

That has been my day thus far. I will add that I have been using a 1 liter Fiji bottle as my reusable bottle so I can drink an adequate amount of water each day. So far I've had almost 2 liters at 4:25pm.


I plan on making tacos for dinner! Woo! I bought some gluten-free taco seasoning at WalMart last night so once I brown up the beef, I'll keep some to the side and simmer that in my own seasoning and the rest will go to the kids.
My husband won't be home tonight so there will probably be leftovers. As it is, I'm making 1 1/2 lbs of ground beef so I'll probably make half for the kids and the other half with my taco seasoning so I can have some for breakfast tomorrow :D I LOVE tacos for breakfast!

I have learned things in the past and also things recently so I can stay on my GF path. I am excited to live the rest of my life without gut pain.

To confirm with everyone, I am not celiac. I have been tested. What I am doing for myself is staying away from gluten because even though I am not celiac, I DO still have a gluten intolerance. Yes, that is possible. And I am Italian and this is going to be dangerously hard. But I need to keep my willpower to continue moving forward on this path.

For the record, basically all Vigo products are gluten free, the sausage I made at lunch was turkey sausage that's gluten free and it tastes just like regular smoked sausage (I pan fried it quickly before adding the rice, water, and butter). Also, I looked on the package of the Snack Pack puddings and they all say gluten-free.

These are 2 of my dinner ingredients. The white corn tortillas, ground beef simmered in his taco seasoning, I'll be using real shredded cheese that is naturally gluten free, lettuce obviously has no gluten, and sour cream is naturally gluten free also. I'll guess I might have 2 or 3 of these tonight. Oh, and I'm also having refried beans which are........ gluten free! :D

These white corn tortillas are going to be huge for me because at some point, I'm also going to use them to make pizzas and some small wraps with lunch meat, cheese, and lettuce. Maybe some other things, we'll see what ideas I can come up with!

I am so excited for my journey I'm beginning today and I have been so stoked so far because I have not had any stomach problems today and I am so grateful. Praise God!

Side Note** I think what I'll start doing is just take pictures all day of what I eat and/or drink and I'll just make journal entries every night after the kids are in bed. So I'm not posting about "This is what I'm going to have for dinner". To me, what's more appealing would be actually seeing the food that I'm eating. Yassss I am a huge foodie! I love a good picture of some food porn. Some goooood looking food, I live for that!**
